Mountain Pork: A New Cooperative, A New Vision
First new cooperative organized by MFU
Ozark
Mountain Pork Cooperative, based in Mountain View, Missouri,
is the first new generation cooperative organized by the Missouri
Farmers Union. Uncertain and unstable market conditions prompted
this group of 34 family farmers to investigate production and marketing
alternatives for swine. Several studies found that consumers desired
great-tasting pork that was raised in humane and environmentally
friendly conditions without the use of unnecessary additives. In
some markets, consumers were willing to pay as much as a 30% premium
for this differentiated product.
The
group formed a cooperative and elected a board of directors in
November of 2001. An equity drive followed, and $790,000 was
raised to buy a small, yet state-of-the-art processing plant
that was built in September of 2000. Operation began in January
of 2002.
The plant has an approximate capacity of 500 hogs per week or
26,000 head per year. Members have delivery rights and delivery
obligations.
The
cooperative members developed a set of production protocols that
would clearly differentiate their pork as a premium product.
This included rigid feeding standards that disallow the use
of unnecessary hormones or other additives. The Animal Humane
Association
approves production practices. In addition, heritage lines
of breeding stock that have proven carcass quality traits for
flavor
and juiciness
must be used.
The story behind the product resonates well to a wide array
of consumers. The progressive town of Mountain View has welcomed
and been supportive of Ozark Mountain Pork’s activities.
The plant employees nearly 30 local residents. Recently the
plant employees
organized with the United Food and Commercial Works, and a
good working relationship has been established.
Like
any other new business, the young cooperative has faced many
challenges. Developing markets and growing production
along with
sales is a juggling act. However, the cooperative is building
strong relationships with independent restaurants as well
as a major distributor
representing hundreds of stores. Ozark Mountain Pork is marketing
their value-added products under the Heritage Acres label.
Products include naturally hickory smoked hams, bacon, loins,
picnics
and jowls as well as 14 varieties of sausages and bratwursts.
The cooperative
uses a team of meat and animal scientists along with culinary
experts to maintain consistent high-quality cuts and develop
new products.
This project is receiving national attention, and many hope
that this unique concept of connecting farmers, workers,
independent retailers and consumers will be an ideal model
that can significantly
improve the food system and the quality of life for family
farmers.
